Last night Nick and I were supposed to have a date night, but our plans were foiled by Mother Nature. With a tornado watch and the threat of hail and severe thunder storms, we decided to stay home with a frozen pizza, bottle of wine and Red Box. The one thing missing from that equation was dessert.
I wanted to make something on the slightly less unhealthy side, since I knew the leftovers would end up as snacks. These cookies were perfect, with their peanutty goodness and just a touch of honey sweetness.
Honey Nut Cookies
(adapted from The Gracious Pantry)
- 1 cup peanut butter
- 1/2 cup honey
- 1 egg
- 1 tsp vanilla extract
- 1/2 cup whole wheat flour
- 1/2 cup peanuts
Preheat oven to 350 degrees. Combine peanut butter, honey, egg and vanilla in a bowl and mix with an electric mixer until combined. Add flour and continue mixing until smooth. Add peanuts and fold in with a spatula.
Using 2 spoons, drop cookies onto parchment lined baking sheets. Bake about 12 minutes, until edges are just beginning to brown. Transfer to a wire rack to cool.
The storm ended up being a bust, but we still enjoyed our night in! And I may or may not have had a few of these cookies for breakfast. 😉
