Another week down, another week closer to the wedding! It’s coming up soon!
Monday: Nick had to fly at night, which meant we only saw each other for a few scattered hours all day. It also meant his dinner was packed to go. I helped him make this sandwich. His additions were the randomly placed pickled green bean and jalapeno.
Tuesday: Our next door neighbors have a huge, awesome garden. I definitely have garden envy. Luckily, I have expressed this envy and my love of fresh veggies to these neighbors and they generously share their bounty with us from time to time. This week’s harvest included cucumbers and banana peppers, which I pickled together using my Easy Homemade Pickle Recipe.
Wednesday: Wednesday night was the first night of the week that Nick was home for dinner, so I made something special: Almond Crusted Bass with Warm Coconut Peanut Sauce. Except instead of bass, I used a combo of halibut and trigger fish that we had in the freezer. YUM!
Thursday: Neither of us slept at all on Wednesday night (blamed on the fact that we ate 10 lbs of chocolate right before bed), so Thursday was a rough day. I was pretty exhausted and didn’t even want to think about grocery shopping or making dinner. One of my favorite easy meals is to cook a package of sliced Italian sausage in a pan, boil some frozen ravioli, and toss it all with jarred sauce. Feels like a home cooked meal, but doesn’t require much work!
Friday: Friday afternoon we headed out of Meridian to Nashville, Tennessee! We met up with some friends there and had a great weekend. It was kicked off with a Bud Light Lime-A-Rita. I’ve been seeing ads for these babies but haven’t been able to locate them in Meridian, so I was super excited to try one! Sadly, it was waaaaay too sweet. But still, worth trying if you’re into sweet girly drinks.
Saturday: Saturday morning in Nashville started with breakfast at a French bakery. Almond croissant and chai latte? Don’t mind if I do. Why don’t we have places like this in Meridian?? Grrr.
Sunday: Before we got in the car to start our 5 hour road trip home, I had to stop at Trader Joe’s. Oh how I have missed that place. I was slightly shocked and disappointed to find out that Trader Joe’s in Nashville does not sell wine. WHAT!? Tragic. But, at least we got some good eats. In lieu of stopping for fast food on the way home, Nick and I bought a picnic to eat in the car: baguette, cheeses, meats and grapes!
