Buffalo Chicken Pasta Salad

I let a photo of this dish slip through Instagram this past weekend, and I got several pretty excited responses. Not surprising, since this is a genius idea!

It’s been a while since I have fed my buffalo chicken obsession with anything new. To be quite honest, my buffalo chicken obsession has actually waned quite a bit lately. The only thing I can possibly attribute this to is the fact that we hardly ever go out to eat anymore and restaurants are usually where I get my fill of the fiery stuff.

I’ve seen a few different buff chick pasta salad recipes floating around the interwebs, and decided to take the bests parts of each one and combine them all together.

Considering I haven’t stopped thinking about this stuff since I finished the last bite of it, I’d say the obsession is back. With a vengeance.

Buffalo Chicken Pasta Salad

  • 1 box pasta, cooked, drained and cooled
  • 2 large chicken breasts, cooked and cubed
  • 5 celery stalks, sliced
  • 2 carrots, sliced
  • 1/2 red onion, finely diced
  • 1 cup blue cheese dressing
  • 1/2 – 3/4 cup buffalo sauce (depending on how hot you want it)
  • Fresh ground pepper, to taste

In a large bowl, combine pasta, chicken and veggies.

 

In a small bowl, mix together blue cheese dressing and hot sauce and add to pasta mixture. Toss everything to combine and season with pepper.

 

Serve chilled.

Amazing. Creamy, spicy, crunchy, perfect.

  1. My boyfriend and I live for buffalo chicken! I can’t wait to make this for him over the weekend :) it’ll be a great picnic meal to take along!
