Even when I’m not blogging, I’m always in the kitchen! I often make things that I’ve blogged before, or make things that don’t necessarily require a recipe. Looking through my phone recently, I realized that 60% of my photos are of my cat (self-proclaimed cat lady, yes) and about 35% are of food (self-proclaimed fat kid, yes). So I thought I’d start sharing my whole week with you, one photo a day! Hopefully it’ll remind everyone of some of my best recipes that I make over and over, and inspire y’all (yep, been in the South too long) to get in the kitchen!
Monday: For dinner I made Shrimp Tacos with Mango Salsa. I make these pretty often because they’re super quick and easy and also extremely delicious! If you want to make these even quicker, sub in pre-made salsa.
Tuesday: Nick flew late on Tuesday, so I was on my own for dinner. When that happens, I usually come up with some pretty random meals, trying to use up what we have in the fridge. I sauted up some baby bella mushrooms (leftover from Salmon-Stuffed Mushrooms) and put them on a whole wheat roll with mustard, avocado, and a fresh hot banana pepper from out neighbor’s garden. Sounds weird but it all went together really well and was delicious!! I want another!
Wednesday: Baking day! I’m leaving you in suspense as to what these became, but trust me, you don’t want to miss it.
Thursday: We were out of milk and yogurt, and I was at a loss for breakfast. I ended up making one of my Pumpkin Oatmeal Pancakes, but used a mashed banana in place of the pumpkin, and left out the milk. It worked great!
Friday: We went to a potluck neighborhood BBQ and I finally had a chance to make a recipe I’ve had my eye on for a while now: Buffalo Chicken Pasta Salad! Recipe coming this week!
Saturday: Nick and I headed to our friend’s lake house for the day. Our heatwave has finally broken and this weekend was gorgeous in the high 80’s. It was actually pleasurable to be outside! I baked up 8 homemade calzones (using my Homemade Pizza Dough recipe) to bring over to share. This one was BBQ chicken, caramelized onions, cheddar, mozzarella and monterey jack. I also made some with pepperoni, salami, ham and mozzarella, and a few with spinach, ricotta and pesto. They were a big hit!
Sunday: Sundays have become Crock Pot days for me! I have a new slow cooker recipe coming this week, which I served with some good ‘ole broc.
