Since I was away this weekend, and recovering for the past couple days, I haven’t been doing a whole lot of cooking. Truthfully, I haven’t even been doing a whole lot of unpacking. Oops. Maybe if I don’t unpack, I can still be on vacation in my mind.
Since I don’t want to leave you with nothing, I thought I’d round up some recipes for the upcoming holiday!
Since Mexican food is one of my favorites (not to mention margaritas… YUM YUM!), I feel the need to always celebrate Cinco de Mayo, despite the fact that I don’t even fully know what the holiday celebrates. Besides tequila.
Cinco de Mayo wouldn’t be Cinco de Mayo (especially on a Saturday) without a drink!
Traditional salsa and guacamole are always delicious, but I like to mix things up a bit.
And once you make it to dinner, I’ve got a few options.
- Taco Salad
- Chicken Tamale Casserole
- Shrimp Tacos with Mango Salsa
- Beer Battered Fish Tacos with Tomato Avocado Salsa
Holidays, no matter how small, are all about food and drink. So crack open a Corona, throw on a little mariachi music, get cooking and start your fiesta!
